What is Veg Khichdi Recipe

In India, the khichdi recipe has always been considered as the queen of all types of foods and very common food in every Indian household. Despite being so common, khichdi can be cooked with lots of variation and versatility. Veg Khichdi is an ultimate comfort dish which is made with rice, veggies, and lentils and flavored with spices. This veg khichdi recipe is one pot means and very easy to cook. It is a very healthy rice recipe and full of nutrients and tasty flavors.

Special tips to make Veg Khichdi

  • Adding veggies in the khichdi is entirely optional. You can skip it if you want to cook plain khichdi.
  • Add water in the khichdi depending upon your desired consistency.

Step 1
Mark as Complete

Wash the moong dal and rice properly 2-3 times in water and soak in the water for 15-20 minutes. Later Drain the water and keep this soaked rice and moong dal aside.

Heat some ghee or oil in a pressure cooker and add cumin seeds, bay leaf, cloves, cinnamon, crushed black pepper and curry leaves. Sauté these spices until they become fragrant.

Add chopped onion and sauté until the onions become translucent. Add mixed vegetables like green peas, potato, carrot, french beans, cabbage, etc. and sauté it for 2-3 minutes.

Later combine soaked rice, moong da in the pan. Also add turmeric powder, red chili powder and salt and 1 tsp of ghee. Give a nice stir and sauté for two more minutes.

Add 3.5 cups of water, cover with lid and pressure cook it for 4-5 whistles. Keep the flame on medium.

Step 6
Mark as Complete

Garnish it with coriander leaves and serve hot.

3 cups Water
2 tbsp Ghee
4 Cloves
5 Black Pepper
6 Curry leaves

2 pieces Bay leaf
1/4 tsp Cumin seed
1/2 tsp Red Chili Powder
1/4 tsp Turmeric Powder
2 tsp Coriander Leaves Chopped
