What is Paneer Handi Recipe and how to make Paneer Handi?

Handi Paneer is a mouth-watering North Indian vegetarian Paneer Recipe. This delicious, creamy and spicy dish is cooked in a handi (pot) which is a type of utensil with a full bottom and shallow depth and is widely used in Indian cooking. If you don’t have handi, you can make this dish in Pan or in a wok as well. This delicious dish goes well with plain or jeera rice or with tandoori roti or naan.

Step 1

Firstly, heat very little oil in a handi and add the paneer and some capsicum in it saute it. Once the paneer gets brown, and capsicum gets softened, remove them and set aside. Take some cold water in a vessel and the fried paneer cubes and capsicum to it. Set it aside. Doing this will prevent fried paneer from getting chewy and hard.

In the same handi, heat oil, add cumin seeds, bay leaves, black pepper powder and saute it well. Add ginger-garlic paste and sauté it for a minute. Add onions, salt and sauté till golden brown.

Add tomato in the handy and fry till it gets mushy and raw smell leaves. Also, add turmeric powder, red chili powder, coriander powder, dry fenugreek leaves, and sauté it well. Keep it to low medium and wait till the oil separates on the sides.

Once you see, oil has started separating at the edges, add whisked yogurt in the pan and ½ cup of water. Mix it well. Cover the Handi with lid and wait for 2 mins till it gets mixed up.

Now add paneer and stir well till the paneer & capsicum is well mixed with the spices. Cook it for another 10 minutes to blend it well in the gravy.

Once it is mixed, add the cream, sugar, cardamom powder, fennel powder and sauté it for two minutes.

Add chopped coriander leaves and few strands of saffron and light off the flame. Now your dish ready, serve it with rice or any Indian flatbread.

As per taste Salt
2 Bay leaf
1/2 tsp Cardamom Powder
1/4 Black Pepper Powder
1/4 tsp Fennel Powder
1/4 tsp Sugar
Few Coriander Leaves Chopped
